La C.A.L. was one of the firstmanufacturers of Munster Géromé in France. It is a
cheese of soft paste and washed rind manufactured from cow milk. When it is young, not
much ripened, its rind is of an orangey colour, its texture is soft but the heart stays a little
crumbly and its taste is fresh. A little older it is ripened just right, its rind is of a rusty colour,
its paste is creamy and its subtle flavours assert themselves.
